Growing up, we were never really exposed to eggplant. Honestly, it was probably one of those vegetables that we ate, but my mom never mentioned for fear that she would get “ewww, I’m not eating that” in response.

So, when eggplant started showing up in my biweekly produce delivery, I didn’t really know what the hell to do with it. I roasted it with olive oil, tried sautéing it up with zucchini and eating along side a protein but none of those preparations made me fall in love…That is where Jamie comes in.

Runner

I have always wanted to be a runner. After threatening many times over the last few years, I finally got the ball rolling. The goal is to run a 1/2 marathon in the next year. Any more than that, I doubt I have the attention span for.

Anyway, I saw this infographic on a fellow runners blog and thought it might be some food for thought. I plan on using this to inspire me to lace up my running shoes tonight!

Week Night Meal Madness

I am trying to eat healthfully and working on portion control. But most week nights, it is easier to grab whatever is in the fridge, or head to a local restaurant to feast.
So I have slowly been adding to my 30 minute or less recipe collection. I love to cook, but there is nothing worse than spending an hour or more cooking on a weeknight when there is inevitably something else more pressing to do.

The recipe I am about to share is one I found in Self Magazine. It is delicious and filling, easy and best of all, it is healthy!

Warrior Dash Kicked My @ss

This weekend I participated in the Warrior Dash in Mechanicsville, MD and let me tell you…it was not for the faint of heart.

On our way to the grounds Catherine looked at me and asked, “So how seriously are we taking this?” and truth be told, once we got going there really wasn’t a choice. It was serious, because the terrain was serious. I probably dropped more F bombs than I can count. Some of the obstacles were straight up scary.

For a simple 5K, it was hard work. We dragged our asses up and down hills, over 90 degree vertical walls, under barbed wire, over and under concrete walls and over logs set afire. It was outrageous and exhilarating.

Doing this event made me want to add more adventure into my regular workouts. I didn’t even notice I was sweating because I was spending all of my time watching the ground beneath me or praying that I wouldn’t fall from six feet off the ground. Having a friend to compete with also boosted my confidence and my endurance. Catherine and I managed to laugh and curse our way through it.

All I can really say is, I felt so damn proud of myself when we crossed that finish line! And, I’ll be back next year.

BLT Deviled Eggs

My memories are strongly tied to food. I remember having a deviled egg at an anniversary party at our cottage in Canada and wanting to devour the whole plate. Of course my WASPy manners stopped me from doing that, but I would have enjoyed every last one!

Saturday was a friend’s engagement party. A 60s themed engagement party. So what better appetizer than deviled eggs (among other things). They were a hit, and I again, had to stop myself from hoarding them in the corner. See the recipe after the jump…. Continue reading »

Polka Dots

I find myself erring towards more and more feminine pieces as I get older. I can remember hating polka dots when I was younger, but now they just scream “fun”! As summer approaches, polka dots feel like a neutral base to pair my favorite brights with.

Considering how rainy this season has been so far, the Asos “Pack A Parka” might be a good bet.

Blog Biz+Buzz

My obsession with blogs started one day when I went looking for a recipe. I stumbled upon dozens and dozens of food blogs, which led me to other food blogs, and then local food blogs and then one say I clicked on someone’s blog roll and found an interior design blog that then led me to fashion blogs and general lifestyle blogs. By the time I got around to the interior design blogs, I was already enamored with the platform. But hadn’t quite gotten up the courage to put myself out there for all the world to judge or love.

Now, I am getting my feet wet. Some weeks are easy. Others I get blogger block. Anyway, on Tuesday, one of my favorite bloggers Meg of Mimi+Meg hosted a seminar. When I saw it advertized on her blog two weeks ago, I flipped and bought a ticket without much more thought. It was all I needed to kick my ass into gear, and the creative juices started flowing. I met some really interesting, creative, lovely women who are all small business owners starting blogs, looking to expand their blogs or just generally trying to get a feel for things. It was refreshing. And Meg was refreshing.
